The first paragraph of at least 25 words in the main content. When an engine summarises a page, that paragraph is the likeliest text to be lifted. If it appears after the first H2, or does not exist, the page is asking the engine to do the summarising, and engines do that badly.
Most retrieval pipelines strip a page to text or Markdown before a model reads it. Navigation, buttons and scripts disappear; headings, lists, links and emphasis survive. The preview is close to what the model gets.
Yes. Without an Organization node an engine has to guess who published the page and whether it is the same company it saw elsewhere. Declare the entity once with name, url, logo, description and sameAs, and reference it from every page.
